Recipe: Lunchbox friendly bliss balls

These energy-packed bliss balls are not only delicious but also a nutritious addition to the school lunchbox, brimming with essential vitamins, fibre, and protein.

RECIPE: Carly Leaker, BHSc Clinical Nutritionist

Ingredients

  • 2 cups dried apricots
  • 1 cup oats
  • ¼ cup chia seeds
  • ¼-½ cup desiccated coconut
  • 3 tbsp maple syrup or rice malt syrup

 

Method

  1. Whizz the apricots in a food processor until chopped
  2. Add oats, chia seeds, coconut and maple syrup and process
  3. Add more maple syrup if mixture is too crumbly to hold
  4. Roll the mixture into balls
  5. Refrigerate for 30 minutes and enjoy 

 

Nutritional information

Dried apricots: Vitamin A, Iron, Potassium

Oats: Fibre, Protein

Chia seeds: Omega 3, Fibre

Coconut: Fibre
