Recipe: Carrot Cake Energy Bites

Ingredients

  • 1.5 cups rolled oats
  • 1/2 cup grated carrot
  • 1/4 cup honey or maple syrup
  • 1/4 cup cream cheese
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup sultanas or dried cranberries
  • 1/4 cup unsweetened shredded coconut (for coating)

Method

  • In a large bowl, combine the rolled oats, grated carrot, honey (or maple syrup), cream cheese, cinnamon, ginger, and nutmeg. Mix until well combined.
  • Stir in the sultanas or dried cranberries. Using your hands, roll the mixture into small, bite- sized balls.
  • Roll each ball in shredded coconut until well coated.
  • Place the energy bites on a tray or plate lined with baking paper. Chill in the refrigerator for at least 30
    minutes to set.
  • Store the energy bites in an airtight container in the refrigerator.

Freezer prep

Instead of placing the energy bites in the fridge, place the baking tray into the freezer to flash freeze for 1 to 2 hours. Once frozen, move the frozen energy bites to a freezer-safe bag or container. They can be stored in the freezer for up to 3 months.
