Recipe: Baked Broccoli Bites

Ingredients

  • 2 cups broccoli florets, finely chopped
  • 1 cup cheddar cheese, grated (or any preferred cheese)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Olive oil (for greasing)

Method

Preheat your oven to 200°C. Line a baking tray with baking paper and lightly grease it with olive oil.

Steam the broccoli until it’s just tender, about 3-4 minutes. Let it cool, then chop it finely.

In a large bowl, combine the finely chopped broccoli, grated cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix well until the ingredients are evenly distributed. Using your hands, form small bite-sized balls from the mixture.

Place them on the prepared baking tray, spaced evenly.

Bake in the preheated oven for 15-20 minutes, or until the bites are golden and crispy on the outside.

Let the broccoli bites cool slightly before serving. They can be enjoyed warm or at room temperature.


Freezer prep

To freeze, allow the broccoli bites to cool completely after baking then place them on a baking tray lined with baking paper. Make sure they are not touching each other. Put the baking tray in the freezer and freeze the bites until they are solid, usually about 1-2 hours. Once they’re solid, transfer to an airtight container. This will prevent them from sticking together and makes it easy to take out only as many as you need at a time. They can typically be kept for up to 3 months.
