When two of South Australia’s most cherished names come together, you know the result will be something special. Haigh’s Chocolates and couture fashion house Paolo Sebastian have collaborated on a stunning new gift range that celebrates everything both brands do best: imagination, hand craftsmanship and meticulous attention to detail.
The collection features soft pink, powder blue and deep navy packaging, finished with gold accents and signature design motifs including the cocoa bean and the nightingale songbird. It’s the kind of beautiful keepsake that makes unwrapping feel like an event.
The story behind the collaboration
Haigh’s Head Chocolatier Ben Kolly and Paolo Sebastian Creative Director and Founder Paul Vasileff worked closely to develop the range, drawing on shared values of authenticity and innovation.
“Growing up, Haigh’s was a special piece of my childhood,” said Paul. “I recall receiving a box of beautifully assorted chocolates and how much it lit me up. As I became older, gifting Haigh’s to others became just as special. The opportunity to collaborate is such an honour.”
Ben was equally inspired by the partnership. “I was deeply inspired by Paul’s stories and childhood memories of Haigh’s while developing the new and limited-edition chocolates for the Gift Range. We can’t wait for our customers to try them and experience this whimsical collection of gifts for themselves.”
What’s in the collection
The range introduces several new limited-edition chocolates featuring hazelnut, rose and floral flavours:
- White Strawberry & Basil Parfait Truffle – a strawberry-flavoured truffle with a basil-infused cream centre
- White Lemon Myrtle & Macadamia Block – creamy white chocolate infused with native lemon myrtle oil and blended with Australian macadamia pieces
- Milk Rose Marshmallow – fragrant rose-infused marshmallow layered over spiced dark chocolate ganache
- Milk Turkish Delight Pastilles – a popular favourite, presented in an embossed gift tin
Beyond the chocolates, the collection includes some truly special keepsakes: a Paolo Sebastian designed apron paired with a cherished family recipe from Paul’s Nonna, and a bespoke teacup and saucer set. Both come with classic Haigh’s chocolates.

The Haigh’s Chocolates x Paolo Sebastian Gift Range will be available in Haigh’s stores in Adelaide, Melbourne, Sydney, Brisbane, Canberra and online from 22 September 2026.
Part proceeds from the sale of every product in the range will go towards Bowel Cancer Australia and their work supporting those impacted by bowel cancer.
