Recipe: Thermomix healthy granola bars for kids

As spring blooms across Australia, families are embracing the season’s fresh produce and warmer weather with more outdoor play and wholesome meals. The Thermomix TM7 is helping families whip up nutritious, additive-free meals for babies and toddlers. Try these delish Thermomix-inspired granola bars for the whole household!

Recipe development manager Rachel Shanks, who leads the recipe development team at Thermomix Australia and New Zealand, says:

INGREDIENTS

40 g sultanas
60 g dried apricots, cut into pieces
120 g quick oats
40 g desiccated coconut
40 g coconut oil
30 g plain flour
70 g peanut butter
1 tsp natural vanilla extract
½ tsp ground cinnamon
¼ tsp baking powder
30 g sunflower seeds
30 g pepita seeds
100 g water (see Tips)

Method

1. Preheat oven to 160°C. Line a baking tray (22 x 32 cm) with baking paper and set aside.
2. Place apricots and sultanas into mixing bowl, then Turbo/2 sec/2 times
3. Place all of the remaining ingredients into mixing bowl and combine 20 sec / speed 3.5.
4. Place dough onto prepared baking tray and press out evenly and firmly using your fingers (approx. 5 mm). Score into bars, then bake 15-18 minutes (160°C), until lightly browned. Remove from oven and set aside to cool before cutting into bars to serve (see Tips).

TIPS

You can replace water with apple juice in this recipe, if desired.

Granola bars will keep in an airtight container for up to 2 weeks or in a freezable container for up to 3 months.
