Ingredients
- 2 cups dried apricots
- 1 cup oats
- ¼ cup chia seeds
- ¼-½ cup desiccated coconut
- 3 tbsp maple syrup or rice malt syrup
Method
- Whizz the apricots in a food processor until chopped
- Add oats, chia seeds, coconut and maple syrup and process
- Add more maple syrup if mixture is too crumbly to hold
- Roll the mixture into balls
- Refrigerate for 30 minutes and enjoy
